Moisture is the enemy

Any lingering water on your herbs will introduce bacteria, turning a preserve into a safety risk. Herbs must be bone-dry before they touch the oil.

Ingredients

  • 2 cupsNeutral oil like grapeseed or high-quality light olive oil
  • 1 bunchFresh herbs, such as rosemary, thyme, or basil, washed and patted dry
The key technique

Keep it below 160°F

If the oil bubbles or the herbs darken quickly, you are frying, not infusing. Use a thermometer to keep the oil steady between 130°F and 150°F.

Step by step

The method.

  1. Dry the herbs

    Lay the herbs on a lint-free towel for several hours. If you see even a speck of water, keep drying; moisture causes spoilage.

  2. Heat the oil

    Pour the oil into the pan over low heat. Bring it to 140°F, checking with your thermometer.

  3. Steep the herbs

    Drop the herbs into the oil. Remove the pan from the heat immediately. Let it sit for 45 minutes as the oil pulls the aromatics from the leaves.

  4. Strain and store

    Line a sieve with cheesecloth and pour the oil through into a clean bowl, pressing the herbs slightly to extract every drop. Transfer to a sterilized bottle.
