Spiced Apple Butter
The secret to a dark, intense apple butter isn't fancy ingredients; it's the duration of the simmer. You are looking for a reduction that transforms simple fruit into a dense, spiced spread.

Because of the high sugar concentration, the mixture can scorch quickly once it thickens. Use a heavy-gauge pot to diffuse the heat.

What goes in.
- 5 lbapples, peeled, cored, and chopped
- 2 cupsapple cider
- 1 1/2 cupsdark brown sugar
- 1 tbspground cinnamon
- 1/2 tspground cloves
- 1/2 tspground ginger
- 1/4 tspfine sea salt
The Spoon Test
Dip a spoon into the center of the pot. If the apple butter clings to the back of the spoon without running or separating, the moisture has been cooked out sufficiently.
The method.
Softening the fruit
Combine the apples and cider in the Dutch oven over medium heat. Cover and cook for 20 minutes until the apples collapse and become mushy.
Smoothing the base
Use an immersion blender to process the apples until completely smooth. If you prefer a rustic texture, a food mill works well to catch the skins if you opted not to peel them.
Adding aromatics
Stir in the brown sugar, cinnamon, cloves, ginger, and salt. Reduce heat to low.
The long simmer
Cook uncovered for 3 to 4 hours, stirring every 15 minutes to prevent sticking. The color will shift from light tan to a deep, dark brown.
Final check
Perform the spoon test. Once the butter is thick and spreadable, ladle into clean jars, leaving a half-inch of headspace.

Add two tablespoons of bourbon during the last ten minutes of simmering for an oaky, rounded finish.

Stir in the zest of one lemon before the final simmer to cut through the heavy sweetness of the spices.
