Small-Batch Strawberry Jam
Strawberry jam relies on the reaction between fruit acid, sugar, and natural pectin when brought to a rolling boil. You cook the berries and sugar until the temperature hits 220°F, turning the mixture into a thick, syrupy preserve that sets firmly as it cools in the jar.
Watch the temperature, not the clock.
Avoid doubling this batch size, as the increased volume prevents the jam from reaching the necessary temperature before the strawberries break down into mush.
- Heavy-bottomed wide pot
- Candy thermometer
- Glass mason jars with new lids
- Canning rack or a folded towel for the pot bottom
What goes in.
- 2 lbfresh strawberries, hulled and quartered
- 3 cupsgranulated sugar
- 1/4 cupbottled lemon juice
Hitting 220°F
At exactly 220°F, the sugar concentration is high enough to create a firm set. Use a thermometer rather than guessing by thickness, as the jam will thicken significantly while cooling.
The method.
Macerate the fruit
Toss the strawberries and sugar in the pot and let them sit for 30 minutes until the sugar draws out the juices.
Initial simmer
Place over medium heat and stir until the sugar is fully dissolved, then bring to a gentle simmer for 10 minutes.
Hard boil
Increase heat to high, add the lemon juice, and boil rapidly. Skim any foam that rises to the surface with a metal spoon.
Test for set
Once the temperature reaches 220°F, remove from heat. The liquid should look glossy and coat the back of a cold metal spoon without dripping off immediately.
Jar and process
Ladle into hot, sterilized jars leaving 1/4 inch of headspace. Wipe the rims clean, seal, and process in a boiling water bath for 10 minutes.

Vanilla Bean
Split one vanilla bean and add the seeds to the fruit while macerating for a deeper aroma.
Black Pepper
Add a half-teaspoon of freshly cracked black pepper during the final minutes of the boil to cut through the sweetness.

Use a pot with a wide surface area to allow moisture to evaporate faster, shortening the cook time.
Place a small plate in the freezer before you start cooking; drop a spoonful of jam onto it later to see how it sets at room temperature.
Never stir the jam constantly while it is boiling, or you will trap air bubbles and affect the set.
