The method.

  1. Prepare the aromatics

    Place the diced onion, minced chili, and salt in your bowl or mortar. Mash them together until the onions release their liquid and the mixture turns into a coarse paste.

  2. Add the avocado

    Halve the avocados and remove the pits. Scoop the flesh into the bowl. Use a fork or pestle to break the fruit into large, uneven chunks.

  3. Fold and season

    Pour in the lime juice and add the cilantro. Fold everything together gently with a spatula. Stop when the green bits are dispersed but the texture remains chunky.

  4. Taste

    Taste with a chip. If it needs more punch, add a pinch more salt. If it tastes heavy, add another squeeze of lime.
