Creamy Arroz con Leche
This is a patience-based dessert. You are not just heating milk; you are coaxing the rice to soften completely while infusing the dairy with aromatics.
Control the heat to prevent scorching.
Use a heavy-bottomed pot to distribute heat evenly. If you burn the milk at the bottom, stop stirring and scrape the contents into a fresh pot immediately to salvage the batch.
- Heavy-bottomed saucepan or Dutch oven

What goes in.
- 1 cupshort-grain white rice
- 4 cupswhole milk
- 1 cupwater
- 1 stickcinnamon
- 1 striplemon zest (avoid the white pith)
- 3/4 cupgranulated sugar
- 1 pinchsea salt
Stirring for texture
Frequent stirring abrades the rice grains, encouraging them to release their starch into the milk. This is the only way to achieve a creamy texture without adding thickeners.
The method.
Rinse the rice
Rinse the rice under cold water in a sieve until the water runs clear. This removes excess surface starch that would otherwise make the pudding gummy.
Infuse the aromatics
Bring the water, cinnamon stick, lemon zest, and rice to a boil in the pot. Reduce heat to low and simmer until the water is almost entirely absorbed.
Add the milk
Pour in the whole milk and add the salt. Increase the heat to medium-low until it just begins to simmer, then immediately drop to the lowest heat setting.
Cook slowly
Simmer for about 35–40 minutes. Stir every few minutes, especially the bottom edges of the pot. The mixture is ready when the milk has thickened to the consistency of thin heavy cream.
Sweeten
Stir in the sugar. Continue to cook for another 5 minutes to allow the sugar to dissolve and the mixture to tighten slightly.
Cooling
Remove from heat and discard the cinnamon stick and lemon peel. Transfer to a bowl. It will continue to thicken significantly as it reaches room temperature.

Coconut infusion
Replace 1 cup of the whole milk with full-fat canned coconut milk for a richer, floral finish.
Golden raisin
Fold in a handful of golden raisins during the final 5 minutes of cooking to plump them up.

Keep the lemon zest strip large so you can easily fish it out at the end.
If the pudding becomes too thick while cooling, stir in a splash of room-temperature milk to loosen it.
Serve at room temperature or slightly warm, as refrigerating it makes the rice grains firm up.

Can I use long-grain rice?
It is not recommended. Long-grain rice contains less amylopectin, meaning it won't release the necessary starch to make the milk creamy, leaving you with grains floating in thin milk.
Why did my milk curdle?
Curdling usually happens if the heat is too high or if the sugar was added too early in the process. Keep the heat strictly on low once the milk is added.
