The method.

  1. Fry the eggplant

    Heat half the oil in your skillet over medium-high. Fry eggplant in batches until golden brown and soft. Remove to a paper towel-lined plate.

  2. Sauté the aromatics

    In the same pan, add the remaining oil. Cook onions and celery until the celery is tender-crisp and the onions are translucent, about 8 minutes.

  3. Build the sauce

    Stir in the tomato purée, capers, and olives. Simmer for 10 minutes until the sauce thickens slightly.

  4. Combine and reduce

    Return the eggplant to the pan. Add the vinegar and sugar. Stir gently to coat without mashing the eggplant. Cook on low for another 10 minutes.

  5. Cooling

    Remove from heat and let the mixture sit in the pan. The oil will rise to the surface as it cools to room temperature.
