Step by step

The method.

  1. Preheat and prep

    Heat your oven to 400°F. Cut the potatoes into thick wedges—aim for about 8 wedges per potato.

  2. Combine the aromatics

    In a large bowl, whisk the olive oil, lemon juice, stock, minced garlic, oregano, salt, and pepper until emulsified.

  3. Coat the potatoes

    Add the wedges to the bowl and toss thoroughly so every surface is glistening with the oil and herb mixture.

    Transfer to the roasting pan in a single layer. Pour any remaining liquid from the bowl over the top.
