Tirokafteri (Spicy Feta Dip)
This is a staple of the Greek meze table that relies entirely on the quality of your feta. Avoid the pre-crumbled packages; use a block of feta stored in brine for the best texture and tang.
Don't over-process the mixture.
The goal is a spreadable consistency, but you want to retain a bit of the feta's original structure rather than turning it into a completely smooth, liquid paste.

What goes in.
- 8 ozfeta cheese in brine, drained
- 2red bell peppers, roasted and peeled
- 1fresh chili pepper (serrano or fresno), seeds removed
- 3 tbspextra virgin olive oil
- 1 tbspred wine vinegar
- 1/2 tspdried oregano
Pulse, Don't Puree
Use short pulses in the food processor to break down the peppers into the cheese. Stop once the ingredients are incorporated; a little bit of resistance when spreading is exactly what you want.
The method.
Prep the peppers
If you are roasting fresh peppers, char them over an open flame until the skins are blackened, then place them in a bowl covered with plastic wrap for 10 minutes. Peel off the charred skin and remove the seeds.
Combine
Place the feta, roasted peppers, fresh chili, vinegar, and oregano into the food processor bowl.
Process
Pulse the mixture 5 to 6 times. Drizzle the olive oil into the feed tube while pulsing a few more times until the mixture holds together.
Adjust
Taste for heat. If you want more intensity, add an extra pinch of chili flakes. Transfer to a bowl and let it sit for at least 15 minutes to allow the flavors to marry before serving.

Roasted Garlic Tirokafteri
Add two cloves of roasted garlic to the food processor for a deeper, mellow sweetness that cuts the saltiness of the feta.
Yogurt-Style
For a lighter consistency, substitute one ounce of the feta with a tablespoon of thick Greek yogurt.

Always taste your feta before seasoning; some brands are significantly saltier than others.
If the dip feels too dry, add an extra splash of olive oil, not water.
Store in an airtight container in the refrigerator for up to 3 days, but bring it to room temperature before serving for the best flavor.

Can I use cow's milk feta?
You can, but sheep's milk or a sheep-and-goat milk blend feta provides the necessary tang and fat content that defines the traditional flavor profile.
What if my dip is too salty?
The easiest fix is to add more roasted red pepper or a small amount of Greek yogurt to neutralize the saltiness.
