Making Afternoon Tea Sandwiches
A proper tea sandwich should be a single, elegant bite that provides a distinct flavor profile without crumbling in the hand. The focus is on texture and contrast—cool cucumber against salted butter, or earthy watercress against sharp egg salad.
Consistency is your main ingredient.
Use soft, high-quality Pullman-style sandwich bread. If you can, slice it yourself to ensure it's slightly thinner than standard store-bought loaves.

What goes in.
- 8 sliceswhite or whole wheat pullman bread
- 4 tbspunsalted butter, softened to room temperature
- 1English cucumber, thinly sliced
- 2hard-boiled eggs, mashed with 1 tbsp mayonnaise and chives
- 1 bunchwatercress, stems removed
Butter to the edge
Spread your fat of choice all the way to the very edge of the bread. This creates a moisture-proof seal that keeps the bread dry and prevents the filling from bleeding out.
The method.
Prepare the bread
Lay out your bread slices in pairs. Trim the crusts off with a sharp serrated knife, using a gentle sawing motion to avoid squashing the soft crumb.
Apply the barrier
Spread a thin, even layer of softened butter or cream cheese over one side of every slice, ensuring you reach the corners.
Layer the fillings
Place your chosen filling on one slice. For cucumbers, overlap the slices slightly to create a continuous layer. For egg salad, spread it level with the thickness of the bread.
Close and press
Place the top slice butter-side down. Cover the sandwiches with a piece of parchment and place a heavy cutting board on top for 10 minutes to help the layers bond.
Final cut
Use a clean serrated knife to cut the sandwiches into three fingers or four small squares. Wipe the knife blade clean between each cut.

Thin ribbons of smoked salmon layered over a spread of lemon-zest cream cheese and fresh dill.
Curried Chicken
Finely diced cooked chicken breast mixed with a mild curry powder, mayonnaise, and mango chutney.

Keep your finished sandwiches under a damp paper towel until serving to prevent them from drying out.
If using cucumber, salt the slices for 10 minutes and pat them completely dry before building the sandwich.
Avoid fillings that are too wet, such as tomato, unless you remove the seeds and jelly first.

Can I make these the night before?
It is best to assemble them no more than 2 hours before serving. If you must prep early, make the fillings, but keep the bread and fillings separate until the last possible moment.
