Clear Broths for Noodles
The secret to a refined noodle broth is patience. You are not trying to force flavor out with heat; you are gently coaxing it into the water over several hours.
Clarity is a function of agitation.
Avoid high heat, as it emulsifies fats and cloudy proteins into the water, ruining the transparency. Start with cold, filtered water to pull maximum clean flavor from the aromatics.

What goes in.
- 3 lbchicken carcasses or knuckle bones
- 1large yellow onion, halved and charred
- 3leeks, white and light green parts only
- 2 inginger, smashed
- 1head of garlic, halved crosswise
- 4 qtcold filtered water
- 1 tbspkosher salt
The Skim and Blanch
Blanch bones in boiling water for five minutes before starting the main cook to remove gray surface foam. During the simmer, use your skimmer to lift any stray bubbles or oils that rise to the surface every 15 minutes.
The method.
Blanch the bones
Place bones in the stockpot, cover with cold water, and bring to a rapid boil. Boil for 5 minutes, then drain and scrub the bones under running cold water to remove dark residues.
Build the base
Return cleaned bones to the rinsed pot. Add charred onion, leeks, ginger, garlic, and 4 quarts of fresh cold water.
Maintain the ghost-simmer
Bring the water to a very low heat. You want to see single bubbles rising slowly to the surface, not a rolling boil. Keep the pot uncovered.
Skim consistently
Watch the surface. As grayish foam or small beads of fat appear, use your skimmer to lift them away. Do this for the first hour of cooking.
Strain
After 3 hours, pass the broth through a fine-mesh sieve lined with cheesecloth into a clean bowl. Do not press on the solids, as this releases cloudy starches.

Vegetable Clarity
Replace bones with roasted parsnips and dried kombu for a lighter, golden-hued base.
Deepened Aroma
Add star anise and toasted coriander seeds in the final 30 minutes of the simmer.
When it doesn't go to plan.
Always use cold water; hot water seals the outside of the ingredients, preventing flavor extraction.
If the broth gets cloudy, stir in one raw egg white and bring it to a gentle shimmer, then strain; the egg will bind the floating proteins.
Chill the broth overnight to lift off the hardened fat layer from the top for a cleaner final product.

Why does my broth turn cloudy despite skimming?
The heat is likely too high. A rolling boil shakes the fats into the water, creating an emulsion. Keep the heat strictly below the simmer point.
Can I season the broth while it cooks?
Wait until the very end. The volume of the broth reduces during cooking, which concentrates the salt. If you salt early, you risk an overly aggressive flavor.
