Step by step

The method.

  1. Prep the oven and bird

    Preheat your oven to 425°F (220°C). Season the inside of the cavity with salt, then stuff with the lemon, garlic, and thyme.

  2. Season the exterior

    Rub the softened butter all over the skin. Sprinkle the salt evenly over the breast, legs, and wings.

  3. Truss and position

    Truss the legs and tuck the wings. Place the chicken breast-side up on the rack set inside the roasting pan.

  4. Roast

    Place in the oven. Roast until the skin is a deep golden brown and the juices run clear when the thigh is pierced, roughly 60 to 75 minutes.

  5. Verify and rest

    Check the temperature by inserting the thermometer into the thickest part of the thigh, avoiding the bone. Transfer the bird to a carving board and let it rest for 20 minutes.
