Mastering Dough Hydration
Dough behavior changes entirely based on how much water the flour can hold. Understanding this relationship allows you to move away from rigid recipes and start manipulating the crumb structure of your loaves.
Weight is your only reliable metric
Volume measurements fail because flour packs down differently every time. Always calculate your percentages based on the baker's math system where flour is 100%.

- 500gBread flour
- 325gWater (65% hydration)

The Autolyse
Mix only the flour and water until no dry bits remain and let it rest for 30 minutes before adding salt or yeast. This hydrates the flour fully, making the dough more extensible and easier to handle before you start the real work.
The method.
Calculate your hydration
Divide the weight of the water by the weight of the flour. 350g water / 500g flour = 0.70, or 70% hydration.
Mix and autolyse
Combine flour and water in a bowl. Use your hand like a claw to incorporate until shaggy, then let it sit covered for 30 minutes.
Incorporate levain and salt
Dimple the yeast and salt into the dough. Fold the edges into the center repeatedly until the salt is fully absorbed and the dough feels uniform.
Manage the stickiness
At 70% hydration and above, use wet hands rather than flouring the surface. Water prevents sticking better than flour, which can lead to dry, dense pockets in your bread.
Monitor the gluten
Perform a windowpane test by stretching a small piece of dough. If it becomes translucent without tearing, the gluten is sufficiently developed for that hydration level.
Other turns to take.
Low Hydration (50-60%)
Dense and easy to knead. Best for crackers, bagels, or beginners practicing basic shaping.
High Hydration (75-85%)
Extremely sticky and loose. Requires coil folds during bulk fermentation to build strength instead of traditional kneading.
When it doesn't go to plan.
Always start at 65% hydration until you learn how your specific flour brand absorbs water.
Higher hydration doughs need longer proofing times as they are more sensitive to temperature changes.
If the dough feels impossible to shape, perform an extra set of folds and let it rest for 20 minutes before trying again.
The ones that keep coming up.
Why does my dough feel like soup?
You likely miscalculated your percentages or used a flour with very low protein content. Check your scale, then try using a stronger bread flour.
Can I add more water later if it feels too dry?
It is difficult to incorporate extra water once the gluten network has formed. It is better to reserve 20g of the total water and add it only if the dough feels tight.
