Mastering Your Mise en Place
Cooking is a series of small, rapid decisions. When your station is set, you remove the guesswork and keep your focus on the texture and color of the food rather than the clock.
Clear your space before you clear your fridge.
A clean, empty countertop is your most important tool. Gather everything you need so that you don't have to leave the stove once you begin.

Group by heat, not by type
Organize your bowls based on when they hit the pan. Ingredients that go in together belong in the same container.
The method.
Read the recipe start to finish
Identify the hidden steps, such as resting time or cooling, before you touch a knife.
Clean as you go
Keep a large bowl on the counter for scraps and peels. This prevents the pile-up that leads to a cluttered workspace.
Measure and portion
Measure dry and liquid ingredients into small bowls. Line them up in the order they will be added to the pan.
Complete the 'knifework'
Chop, dice, and mince everything before turning on the burner. A sharp knife and a stable board make this the fastest part of the process.
Clear the decks
Once everything is prepped, wash your cutting board. You should be cooking with a clean, dry surface.
When it doesn't go to plan.
Use small bowls for wet ingredients and ramekins or even saucers for spices.
If a recipe calls for hot water or broth, have it ready in a measuring cup so you aren't waiting for the tap.
Place your garbage bowl near your dominant hand to minimize reaching.
The ones that keep coming up.
Is mise en place really necessary for simple meals?
The simpler the meal, the more visible your technique is. It turns a quick weeknight dinner into a meditative practice rather than a chore.
What if I don't have enough small bowls?
Use whatever you have. Mugs, glasses, or small plates work just as well for holding prepped ingredients.
