The Pinch Grip

Do not hold the handle like a tennis racket. Pinch the base of the blade between your thumb and index finger, then wrap your remaining fingers around the handle.

The method.

  1. The Claw

    Curl the fingers of your non-knife hand inward, resting your fingertips against the side of the blade. This keeps your nails away from the edge and creates a guide for the knife to slide against.

  2. The Rocking Motion

    For herbs or garlic, keep the tip of the knife in constant contact with the board. Pivot the knife up and down in a rocking arc, moving your hand back as you progress.

  3. The Forward Slice

    For larger vegetables like onions or carrots, engage the heel of the knife near the board and push the blade forward and down in one smooth, sliding motion. Do not press straight down.

  4. Flat-Facing

    If a vegetable like an onion rolls, cut a thin slice off one side to create a flat base. Always place the flat side against the board to ensure it stays put.
