Tempering Chocolate at Home
You do not need industrial machinery to get professional results. A reliable thermometer and a dry workspace are your most important tools. Work with small batches until you gain a feel for how the chocolate moves as it thickens.
Keep water far away from your workspace.
A single drop of moisture will cause the chocolate to seize into a grainy, unusable mass. Ensure your bowls and spatulas are bone-dry before you begin.
- Digital instant-read thermometer
- Large stainless steel bowl
- Wide saucepan (for the water bath)
- Silicone spatula
- Marble slab or granite countertop (optional for tabling)

- 1 lbhigh-quality couverture chocolate (chips or finely chopped bars)
Introducing Stability
By adding unmelted, tempered chocolate into the melted mass, you provide a template for the cocoa butter to align its crystal structure, ensuring the final batch sets hard and glossy.
The method.
Melt the base
Place two-thirds of your chocolate in a dry bowl set over a saucepan of barely simmering water. Stir constantly until it reaches 115°F (46°C) for dark chocolate or 110°F (43°C) for milk chocolate.
Cool and seed
Remove the bowl from the heat. Add the remaining third of the room-temperature chocolate. Stir continuously to melt the new pieces and bring the overall temperature down.
Monitor the work
Continue stirring until the mixture reaches 88°F to 90°F (31°C to 32°C) for dark, or 84°F to 86°F (29°C to 30°C) for milk. The texture should change from liquid to a slightly thicker, syrupy consistency.
The test
Dip the tip of a knife into the chocolate and set it aside for three minutes. If it dries with a smooth, firm, and glossy finish without streaks, it is tempered.
When it doesn't go to plan.
If the chocolate cools below the working range, apply gentle heat for no more than five seconds at a time; overshoot the temperature, and you must start the process over.
Never let the bottom of your bowl touch the simmering water; use the steam to heat the chocolate slowly.
Work in a cool room. High humidity or heat will ruin the set of the chocolate regardless of how well you tempered it.

What happens if my chocolate seizes?
Seizing occurs due to water contact or excessive heat. Unfortunately, there is no way to fix seized chocolate; use it for brownies or ganache instead.
Does the type of chocolate change the process?
Yes. Dark, milk, and white chocolates have different cocoa butter contents and require slightly different temperature ranges.
