Tempering Chocolate
Tempering is the process of heating and cooling chocolate to force its cocoa butter into a stable crystalline structure. This ensures your final product sets with a clean snap, a deep shine, and resistance to gray streaks when left at room temperature.
Control is the only ingredient that matters here.
Humidity is your enemy; ensure your workspace is dry and your tools are completely free of water, as even a single drop can cause the chocolate to seize into a grainy paste.

- 1 lbHigh-quality couverture chocolate (chips or finely chopped)
Controlled Crystallization
By melting two-thirds of your chocolate and stirring in the unmelted 'seed' pieces, you force the liquid cocoa butter to mimic the stable crystalline structure of the solid pieces.
The method.
Melt the base
Place two-thirds of the chocolate in a heatproof bowl over barely simmering water. Stir until the temperature reaches 115°F (46°C) for dark chocolate, or 110°F (43°C) for milk or white.
Incorporate the seed
Remove from heat. Add the remaining one-third of the room-temperature chocolate. Stir constantly and gently to avoid introducing air bubbles.
Cool to working temperature
Continue stirring until the temperature drops to 88-90°F (31-32°C) for dark, or 84-86°F (29-30°C) for milk/white. The chocolate will begin to thicken and lose its initial glossy, thin appearance.
Test for set
Dip the tip of a knife into the chocolate and set it aside for three minutes. If it dries with a streak-free, matte-to-satin finish and snaps when bent, you have successfully tempered.

Tabliering (Marble Method)
Pour two-thirds of melted chocolate onto a cold marble slab, working it back and forth with a bench scraper until it reaches the target temperature, then return it to the bowl with the remaining third.
When it doesn't go to plan.
Keep a hairdryer nearby; if the chocolate sets too quickly before you finish your work, a three-second blast of warm air can bring it back into the working range.
Never let the bottom of your bowl touch the water in the pot; the steam provides more than enough gentle heat.
If your chocolate becomes dull or white-streaked, it has gone out of temper; you must begin the melting process again.

Why did my chocolate seize?
You likely introduced moisture. Water causes the sugar in the chocolate to dissolve and pull the cocoa solids together into a hard, grainy clump.
Can I use a microwave?
Yes, but use 50% power in 30-second bursts, stirring thoroughly between each. It is risky because microwaves create hot spots that burn chocolate easily.
