Mastering the Mirror Glaze
A mirror glaze is a poured gelatin-based coating that relies on temperature control rather than skill to create a high-gloss, reflective finish on frozen desserts. You heat sugar, water, and condensed milk with bloomed gelatin, emulsify it with white chocolate, and pour it over a cake that is strictly at freezer temperature. The contrast between the warm glaze and the frozen surface causes the set you see on professional pastry cases.
Temperature is your only enemy.
If the glaze is too hot, it slides off the cake; if it is too cool, it clumps and leaves lines. You must use a digital thermometer to hit the application window.

What goes in.
- 12gpowdered gelatin (200 bloom)
- 60mlcold water (for blooming)
- 150ggranulated sugar
- 150gglucose syrup
- 75mlwater
- 100gsweetened condensed milk
- 150ghigh-quality white chocolate, finely chopped
- as neededgel food coloring
Eliminate bubbles before they set
Use the immersion blender at the bottom of the pitcher to avoid pulling air into the mixture. Keep the head fully submerged, strain the liquid through a fine-mesh sieve, and let it rest until it hits the correct temperature to ensure a glass-like surface.
The method.
Bloom the gelatin
Whisk 12g gelatin into 60ml cold water. Let it sit for 10 minutes until it looks like a firm, dry sponge.
Boil the base
In a saucepan, bring sugar, glucose, and 75ml water to a boil. Once it hits 103°C, remove from heat.
Emulsify
Stir in the bloomed gelatin and condensed milk. Pour the hot mixture over the white chocolate in a tall pitcher. Wait one minute, then submerge the immersion blender.
Smooth the mixture
Blend in short bursts, moving only the bottom of the pitcher, until the chocolate is fully melted. Add your color.
Strain and cool
Pass the mixture through a fine-mesh sieve into a clean bowl. Cover with plastic wrap touching the surface and let it cool to exactly 30°C to 32°C.
The pour
Place your fully frozen cake on a rack over a tray. Pour the glaze in a steady circle starting from the center, working outward in one continuous motion.

Dark Chocolate Mirror Glaze
Replace the white chocolate with 70% dark cocoa solids; omit food coloring and reduce the gelatin by 2g, as dark chocolate provides more structure.
Marble Effect
Pour a second, thinner glaze of a contrasting color over the base coat immediately after the initial pour, using an offset spatula to gently sweep the colors together.
When it doesn't go to plan.
Always place your cake on a small inverted bowl when pouring so you can easily move it to a plate once the excess drips off.
If the glaze develops air bubbles while cooling, tap the pitcher firmly against the counter or use a kitchen torch to lightly pass over the surface.
If you have leftover glaze, it keeps in the refrigerator for up to a week; reheat gently in the microwave to 30°C before reusing.

Why did my glaze slide right off the cake?
Your cake was likely not frozen solid enough. The glaze requires a thermal shock—hitting a surface below 0°C—to stop the movement and set the structure.
Can I use standard chocolate chips?
No. Standard chips contain stabilizers that prevent them from melting into a smooth emulsion. Use block chocolate or professional couverture feves.
