Professional Mirror Glaze
A true mirror glaze acts like a liquid lens. It requires patience for the cooling process and a cake frozen solid to the core, which forces the glaze to set the moment it touches the surface.
The cake must be stone-cold
If your cake is not frozen solid, the moisture from the cake will melt the glaze from the inside out, ruining the mirror finish. Prepare your base and freeze it for at least four hours before glazing.
- Immersion blender
- Digital thermometer

What goes in.
- 12 gpowdered gelatin
- 60 mlcold water (for gelatin bloom)
- 150 ggranulated sugar
- 150 gglucose syrup
- 75 mlwater
- 150 gwhite chocolate, finely chopped
- 100 gsweetened condensed milk
- Optionalgel food coloring
Eliminate the air
Keep the head of your immersion blender flat against the bottom of the pitcher to avoid sucking air into the emulsion. Air bubbles are the primary enemy of a glass-like finish.
The method.
Bloom the gelatin
Whisk the gelatin into the 60ml of cold water and set it aside until it firms into a solid mass.
Heat the syrup
Bring the sugar, glucose, and 75ml of water to a boil in a small saucepan. Remove from heat immediately once it reaches 103°C.
Emulsify
Pour the hot syrup over the chocolate and condensed milk in a tall pitcher. Add the bloomed gelatin. Let it sit for one minute.
Blend
Use the immersion blender to pulse the mixture until smooth. Add coloring now if desired.
Strain and cool
Pour the mixture through a fine mesh sieve to catch any rogue bubbles or bits of chocolate. Cover with plastic wrap pressed directly against the surface and let it cool until it hits exactly 32°C.
Pour
Remove the cake from the freezer and place it on the wire rack. Pour the glaze in a steady, circular motion starting from the center of the cake.

Dark Chocolate Mirror Glaze
Replace white chocolate with high-quality dark chocolate (minimum 60% cocoa). Skip the food coloring, as the cocoa provides a deep, natural shine.
When it doesn't go to plan.
If you see bubbles after blending, tap the pitcher firmly on the counter before straining.
Do not stir the glaze with a spoon or whisk once it has cooled; this introduces air back into the liquid.
If your glaze drops below 30°C before you finish, gently warm it over a double boiler, but do not exceed 35°C.

Why is my glaze dull?
The glaze was likely poured at too low a temperature, or it was not blended thoroughly enough to create a stable emulsion.
Can I reuse leftover glaze?
Yes. Pour it into a container, press plastic wrap to the surface, and refrigerate. Reheat it gently over a double boiler when ready to use again.
