Steaming Milk for Lattes
Texture milk by introducing air in the first few seconds to create microfoam, then submerging the wand to create a whirlpool that incorporates the bubbles into a smooth, glossy paint-like consistency. The goal is to heat the milk to roughly 140°F (60°C) while expanding its volume by about 20 to 30 percent.
Cold milk is mandatory.
Starting with cold milk and a chilled pitcher provides the necessary window of time to aerate the liquid before it reaches the temperature limit.

Maintaining the Swirl
Once you stop adding air, the steam wand must be positioned just off-center to create a constant whirlpool; this pulls the large bubbles down and breaks them into a dense, velvety foam.
The method.
Purge the wand
Open the steam valve for two seconds into your towel to clear any condensed water from the line.
Position the tip
Submerge the wand tip just below the surface of the milk, slightly to one side of the center.
Introduce air
Turn the steam on full. You should hear a soft, paper-tearing sound as you lower the pitcher slightly to let air in. Do this for only 3 to 5 seconds.
Create the vortex
Raise the pitcher slightly to bury the wand tip deeper. The tearing sound stops, replaced by a smooth rushing sound as the milk spins rapidly.
Monitor temperature
Keep your hand on the side of the pitcher. When the metal becomes too hot to hold comfortably for more than a second, shut the steam off.
Clean and finish
Wipe the wand immediately with a damp towel and purge it once more. Tap the pitcher firmly on the counter and swirl the milk to remove any visible surface bubbles.

These often aerate faster than dairy; stop adding air sooner to avoid an overly thick, stiff foam.
When it doesn't go to plan.
If the milk sounds like screeching metal, the wand tip is too close to the surface; bury it deeper immediately.
Do not overfill the pitcher. Stop at the point where the spout begins to curve to allow room for volume expansion.
If you end up with large bubbles on top, swirl the pitcher aggressively in a circular motion until the surface looks like wet paint.

How do I know if I've steamed it too long?
If the milk tastes like scorched cereal or has a thin, watery layer under a thick, dry foam cap, the milk was overheated.
Can I reuse milk that didn't get used?
No. Once milk has been heated, its protein structure changes; it will not texture correctly a second time.
