Roasted Nut Mix
This is a pantry staple that relies on the contrast between the depth of toasted nuts and the sharpness of fresh aromatics. Once you move past raw snacking, the heat transforms the internal oils, creating a crunch that holds up for days.
Avoid pre-roasted nuts
Always start with raw nuts. Pre-roasted nuts will burn before the flavors have a chance to meld.

What goes in.
- 2 cupsraw almonds
- 1 cupraw pecans
- 1 cupraw walnuts
- 1 tbspmelted unsalted butter or neutral oil
- 1 tspkosher salt
- 1/2 tspfreshly cracked black pepper
- 1/4 tspsmoked paprika
Smell, don't time
Your nose is a better timer than the clock. Pull the nuts from the oven the moment the kitchen fills with a deep, toasted aroma, before the color turns to dark brown.
The method.
Preheat the oven
Set your oven to 350°F (175°C) and ensure the rack is in the center position.
Arrange the nuts
Spread the raw nuts in a single layer on a parchment-lined baking sheet. Do not crowd the pan, or they will steam instead of roast.
Roast
Place in the oven for 8 to 12 minutes. Shake the pan halfway through to ensure even browning.
Season
Transfer the hot nuts to a mixing bowl. Immediately toss with the butter or oil, followed by the salt, pepper, and paprika. The heat will melt the butter and help the spices adhere.
Cool
Let the nuts sit at room temperature for at least 15 minutes before serving to let the coating set and the crunch firm up.

Sweet and Spicy
Add a teaspoon of honey and a pinch of cayenne pepper during the tossing phase.
Herbed
Toss with a tablespoon of finely minced fresh rosemary immediately after roasting.

If you want to toast nuts individually, remember that smaller nuts like pine nuts or sliced almonds roast much faster than walnuts or whole almonds.
Store in an airtight glass jar once completely cooled; they stay crisp for about a week.
Do not add fresh herbs before roasting; they will scorch and turn bitter.
