Crispy Roasted Chickpeas
Roasted chickpeas rely on dryness. After rinsing and draining the legumes, you must pat them completely dry with a clean towel; any surface moisture will steam the skins instead of hardening them, resulting in a soft texture rather than the intended crunch.
Commit to the dry phase
Your success hinges on the chickpeas having zero moisture on their surface before they enter the oven. Take the extra minute to roll them thoroughly between two kitchen towels.

What goes in.
- 15 ozcanned chickpeas (garbanzo beans)
- 1 tbspneutral oil (grapeseed or avocado)
- 1/2 tspfine sea salt
Moisture removal
Spread the chickpeas across a flat towel and rub them gently but firmly. You want them matte and dry to the touch before oil touches them.
The method.
Preheat the oven
Set your oven to 400°F (200°C) and place a rack in the middle position.
Dry the beans
Drain the chickpeas into a colander, rinse under cold water, and shake dry. Transfer to a towel and pat until they feel slightly tacky, not wet.
Season
In a bowl, toss the dried chickpeas with the oil until evenly coated. Do not add salt yet, as it draws moisture out during the roasting process.
Roast
Spread them in a single layer on the baking sheet. Roast for 30–40 minutes, shaking the pan every 10 minutes to ensure even browning.
Final seasoning
Remove from the oven when they are golden brown and sound hollow when shaken. Immediately toss with salt while hot so it adheres.

Smoky Paprika
Add 1/2 teaspoon smoked paprika and a pinch of cayenne along with the salt after the chickpeas come out of the oven.
Herbed Garlic
Toss with 1/2 teaspoon garlic powder and 1/2 teaspoon dried oregano immediately after removing from the heat.

Discard any loose, papery skins that shed during the drying process; they burn quickly and taste bitter.
Do not crowd the baking sheet; if the chickpeas are touching, they will steam and lose their structural integrity.
Wait to salt them until the very end to keep the interior from becoming mealy.

Why are my chickpeas still soft after 40 minutes?
This usually happens because there was residual water on the skins when they went into the oven. Next time, allow them to air dry on the towel for 10 minutes after rubbing them.
Can I use dried chickpeas?
Yes, but they must be soaked and cooked until tender first. Canned chickpeas are more reliable for this method because they have a consistent texture.
