Before you start

Size consistency is the secret to even cooking.

Cut your florets into uniform, bite-sized pieces so the smaller ones don't turn to mush before the thicker stems are tender.

  • large pot with a tight-fitting lid
  • steamer basket
  • chef's knife
  • cutting board
Ingredients

What goes in.

  • 1 lbfresh broccoli, cut into uniform florets
  • 1 inwater (for the base of the pot)
  • 1/2 tspsea salt
The key technique

Stop at the Emerald Shift

Watch for the color to deepen into a bright, saturated green. If the broccoli starts to look dull or olive-toned, you have gone too far.

Step by step

The method.

  1. Prepare the water

Add one inch of water to your pot. Bring it to a rolling boil over high heat.

  2. Arrange the broccoli

Place the florets into the steamer basket. Do not crowd them; they need room for the steam to circulate.

  3. Steam

Lower the basket into the pot and cover it immediately with the lid to trap the steam. Set a timer for four minutes.

  4. Test and remove

Test a stem with the tip of a knife; it should slide in with minimal pressure. Remove the basket from the pot immediately to prevent residual heat from softening the stalks further.

Variations

Other turns to take.

Garlic Finished

Toss the hot, steamed broccoli in a bowl with a tablespoon of melted butter and a clove of finely minced garlic.

Lemon Zest

Finish with a light dusting of fresh lemon zest and cracked black pepper to lift the vegetal notes.

Tips & troubleshooting

When it doesn't go to plan.

Tip

Never let the bottom of the steamer basket touch the boiling water, or you will be boiling the broccoli instead of steaming it.

Tip

If you are not serving immediately, plunge the steamed broccoli into a bowl of ice water to lock in the color and stop the cooking process.

Tip

Save the thick broccoli stalks; peel the tough outer skin with a vegetable peeler, slice them into coins, and steam them right along with the florets.

Questions

The ones that keep coming up.

Why did my broccoli turn brown?

Brown or olive-colored broccoli is a sign of overcooking. Keep a close eye on the timer and pull it off the heat as soon as it reaches that bright, vibrant green.

Can I steam frozen broccoli?

Yes, but skip the thawing process. Add one minute to the total cooking time and ensure the water is at a hard boil before adding the basket.
