The method.

  1. Prep the oven

    Set your oven to 425°F and slide the baking sheet onto the middle rack while the oven comes to temperature.

  2. Season the potatoes

    In a large bowl, toss the dry potato cubes with the fat, salt, pepper, garlic cloves, and thyme sprigs until every surface is evenly coated.

  3. Arrange the tray

    Carefully remove the hot pan. Spread the potatoes in a single layer. Space them so they are not touching; crowding will steam them instead of roasting.

  4. Roast

    Return the pan to the oven for 30 minutes. Do not move them. You want the side touching the metal to develop a deep, dark golden hue.

  5. Flip and finish

    Turn the potatoes once. Roast for another 10–15 minutes until the garlic is soft and the potatoes yield to a paring knife.
