Proper Hushpuppies
Hushpuppies rely on a coarse cornmeal base and a precise oil temperature to achieve a crisp, deep-bronze exterior while maintaining a steaming, tender center. The goal is a light, airy crumb that doesn't soak up the oil, achieved by not overworking the batter and dropping precise spoonfuls into steady heat.

If the oil is too cold, they turn into greasy sponges; too hot, and the inside stays raw. Use a thermometer to keep the oil steady at 365°F.

What goes in.
- 1.5 cupscoarse-ground yellow cornmeal
- 0.5 cupall-purpose flour
- 1 tbspbaking powder
- 1 tspsalt
- 0.5 cupfinely diced white onion
- 1large egg
- 1 cupbuttermilk

Let the cornmeal bloom
Mix your dry and wet ingredients and let the batter sit for ten minutes before frying. This allows the cornmeal to hydrate fully, preventing a gritty texture.
The method.
Heat the oil
Fill your pot with at least 3 inches of oil. Bring it to 365°F over medium-high heat.
Combine dry
Whisk the cornmeal, flour, baking powder, and salt in a large bowl. Ensure the baking powder is evenly distributed.
Incorporate wet
Add the onion, egg, and buttermilk to the dry mix. Stir until just combined; if you see a few streaks of flour, stop mixing.
Rest the batter
Set the bowl aside for ten minutes. You will notice the consistency thicken slightly as the cornmeal swells.
Fry in batches
Use a cookie scoop to drop rounded portions into the oil. Do not overcrowd the pot. They will naturally roll over when the bottom side is browned.
Drain and serve
Remove when they reach a deep golden brown color. Drain on a wire rack rather than paper towels to keep the bottoms from steaming.
