The Heat-Dry Method

Never air-dry cast iron. Always place your wet pan over a low burner for two minutes until the heat forces the moisture out of the microscopic pores of the iron.

The method.

  1. Clean while warm

    Wash the pan with hot water while it is still warm from the stove. Use a stiff brush for stuck bits; if something is truly stubborn, scrub it with a handful of kosher salt.

  2. Dry completely

    Wipe it with a cloth, then set it on a burner over low heat. Wait until the surface looks chalky and completely dry.

  3. Apply the fat

    While the pan is warm, add half a teaspoon of oil. Use a paper towel to buff it into every corner of the surface, then use a clean side of the towel to wipe away every trace of excess oil until it looks matte, not greasy.
