Classic Sour Mix
Sour mix is a balance of fresh citrus juice and simple syrup. The secret is using equal parts fresh-squeezed lemon and lime juice, mixed with a sugar syrup that has been allowed to cool completely. Never use bottled juice, as the metallic aftertaste will ruin the clean snap of a cocktail.
Freshness is the only shortcut
The quality of your final drink depends entirely on the acidity of your citrus. If the lemons feel heavy for their size, they will provide the best juice.

What goes in.
- 1 cupgranulated sugar
- 1 cupwater
- 1/2 cupfresh lemon juice
- 1/2 cupfresh lime juice
The cooling rule
Always add the citrus juice to the syrup only after the syrup has reached room temperature. Adding juice to hot syrup cooks the citrus and flattens the bright, sharp notes.
The method.
Make the simple syrup
Combine 1 cup sugar and 1 cup water in a saucepan over medium heat. Stir only until the sugar dissolves completely and the liquid becomes transparent.
Cool the base
Remove the pan from the heat and set it aside. Let it cool until it is no longer warm to the touch.
Prepare the citrus
Juice your lemons and limes. Strain the juice through a fine mesh sieve into a measuring cup to remove all pulp and stray seeds.
Combine
Pour the cooled syrup and the strained juices into a clean glass jar. Seal it tightly and shake well to incorporate.
Store
Keep the mixture in the refrigerator. It remains at its peak for about one week.

Roll the lemons and limes firmly against the counter with your palm before cutting them to break down the internal membranes and release more juice.
If you prefer a brighter, more lemon-forward profile, adjust the ratio to 3/4 cup lemon juice and 1/4 cup lime juice.
Do not let the syrup boil; once the sugar disappears into the water, it is ready.

Can I use store-bought lemon juice?
Avoid it. Commercial lemon juice is often treated with preservatives that create a bitter, chemically sharpened taste that clashes with spirits.
My mix looks cloudy, is that normal?
Yes. Fresh citrus juice contains oils and solids that will naturally cloud the syrup. A fine mesh strainer helps, but some opacity is expected.
