Whipped Cinnamon Cream
This is a simple preparation that rewards timing more than technique. You are looking for a cloud-like texture that holds its shape without turning grainy, which happens the moment you over-beat the fat.
Cold cream is mandatory.
If your cream is room temperature, it will not aerate properly and may separate. Ensure your bowl and whisk are chilled for best results.
- large stainless steel mixing bowl
- balloon whisk or hand mixer
- silicone spatula
What goes in.
- 1 cupheavy whipping cream, chilled
- 2 tbsppowdered sugar, sifted
- 1 tspground cinnamon
- 1/2 tsppure vanilla extract
Stopping at soft peaks
Stop whisking as soon as the cream creates a gentle trail behind the whisk and holds a soft shape that curls over at the tip. Anything further risks turning the cream into sweet cinnamon butter.
The method.
Combine the dry ingredients
Whisk the sifted powdered sugar and ground cinnamon together in a small bowl to ensure no clumps remain.
Begin whisking the cream
Pour the cold cream into your chilled mixing bowl. Whisk on medium-high speed until the cream begins to thicken and you see the first bubbles vanish.
Incorporate flavor
Add the vanilla and the cinnamon-sugar mixture. Continue to whisk steadily.
Reach the finish line
Watch the cream closely. As soon as the whisk leaves distinct tracks and the cream holds a soft, billowing shape, stop immediately. Use a spatula to fold the edges once to ensure everything is incorporated.
Other turns to take.
Spiced Rum Cream
Replace the vanilla extract with a teaspoon of dark spiced rum for a deeper, warmer finish.
Cardamom-Cinnamon Cream
Add a pinch of freshly ground cardamom to the cinnamon for an aromatic, citrus-like edge.
When it doesn't go to plan.
Place your bowl in the freezer for ten minutes before beginning to ensure the cream stays cold throughout the process.
If you accidentally overbeat the cream to a stiff, grainy texture, whisk in one tablespoon of liquid heavy cream by hand to smooth it back out.
Sifting the sugar and cinnamon is not optional; it prevents gritty spots in the final texture.
The ones that keep coming up.
Can I make this ahead of time?
It is best served within thirty minutes of whipping. If you must hold it, keep it in the refrigerator for no more than two hours and give it a gentle stir before using.
Why does my cream taste gritty?
The cinnamon likely did not dissolve or the powdered sugar wasn't sifted. Use a fine-mesh sieve for both to ensure a silky texture.
