Making a Consistent Espresso Puck
The puck is the foundation of your shot. If the density is uneven, the water will find the path of least resistance, leading to sour or bitter results in the cup.
Consistency is your primary tool
Your goal is to eliminate air pockets and create a flat, level surface for the machine to act upon.

Maintaining a perpendicular plane
The surface of the coffee must be perfectly horizontal. If you tilt the tamper, you create a slope that forces water toward one side of the basket.
The method.
Dose the grounds
Fill your portafilter basket with freshly ground coffee, aiming for a consistent weight every time.
Distribute the coffee
Use a distribution tool or your finger to level the grounds across the basket. Avoid packing it down at this stage; just move the mounds into the valleys.
Tamp firmly
Press the tamper down until you feel the coffee compress and resist further movement. Keep your wrist locked and your elbow directly over the handle to apply even downward force.
Polish
Give the tamper a slight twist as you lift it to smooth the top surface of the puck.

WDT Method
Use a thin needle tool to stir the grounds inside the basket before leveling; this breaks up static clumps and produces a more uniform extraction.
When it doesn't go to plan.
Clean the rim of the portafilter basket before locking it into the machine; loose grounds can cause the gasket to fail or create messy leaks.
Check for a 'donut' or uneven flow during your shot to diagnose if your distribution was lopsided.
If your puck comes out wet and soupy, you may be dosing too little or grinding too coarse.

How hard do I really need to press?
Hard enough to remove all air gaps. Once the coffee is fully compressed, pressing harder does not change the extraction density significantly.
