Knife sharpening: whetstone, rod, or send it out
Your rod has never sharpened anything in its life. Knowing which of the three problems you actually have is the entire skill.

First, find out what is actually wrong
There are three separate things people mean when they say a knife is blunt, and they require three different responses. Almost everyone owns exactly one tool and applies it to all three, which is why almost everyone's knives are worse than they should be. Before you buy anything, spend ninety seconds finding out which problem you have.
Hold a sheet of printer paper by one corner, letting it hang. Draw the knife down through it in one slicing motion. A knife with a good edge parts the paper with a clean whisper and no snagging. A knife with a rolled edge catches, tears, or skates off the surface entirely. Now hold the blade edge-up under a bright light and look straight down at it. A truly sharp edge is invisible — there is nothing there to reflect. If you can see a thin bright line running along the edge, that line is a flattened, worn-away surface, and it is the width of the problem.
A rolled edge is bent. A worn edge is gone. One you can push back. The other you have to cut a new one.
Those two findings separate the three cases. An edge that still looks invisible under the light but drags on paper has rolled over to one side — the steel is all still there, simply pointing the wrong way. An edge showing a bright line has lost material and needs new metal removed to form a new apex. And an edge with a visible chip, a rounded tip, or a bevel that has been ground crooked by years of a pull-through gadget needs more correction than most people should attempt at their own counter.

Verdict one · the honing rod does not sharpen
This is the misunderstanding at the centre of every domestic knife drawer. A smooth steel honing rod removes essentially no metal. What it does is push a rolled edge back into alignment — the fine apex of a blade is only microns across, it bends under lateral force during normal cutting, and the rod bends it straight again. Ten light passes per side at roughly the angle of the bevel, alternating, using the weight of the knife rather than pressure. That is honing.
Done before or after each session of real cutting, it will keep a properly sharpened knife feeling sharp for weeks. Done to a knife whose edge has actually worn away, it accomplishes nothing at all, and the cook concludes that honing does not work. Honing works perfectly. It simply solves a problem you do not have.
Ceramic and diamond-coated rods are a different object wearing the same shape — those do abrade a little metal and sit somewhere between honing and light sharpening. Useful. But if you own the plain steel rod that came with the block, understand what it is for. Use it weekly, on a knife that is already sharp.
Verdict two · the whetstone is the only one that makes a new edge
A water stone removes metal. That is the whole difference and it is not a small one. You are grinding away the worn, rounded shoulder of the blade until two fresh planes meet at a line, and that line is the edge. Nothing else in a home kitchen does this. Everything else either straightens what is there or removes metal so crudely that you lose years of blade in a few seconds.
A combination stone — roughly 1000 grit on one face for cutting the edge, 3000 to 6000 on the other for refining it — covers every kitchen knife you own. Soak it as its instructions say, hold the blade at about fifteen degrees for a Japanese knife or twenty for a European one, and work one side until you can feel a faint wire of metal — the burr — along the entire opposite edge with a fingertip drawn away from it. That burr is the proof. It means the two planes have met. Then do the other side until the burr flips over, then take it off with a few very light alternating passes on the fine face.
The milky slurry that develops is not mess. It is suspended stone and steel particles and it is doing a meaningful share of the cutting. Do not rinse it away mid-stroke. Learning to hold a consistent angle takes three or four knives' worth of practice and it is genuinely the hardest part; a cheap angle guide clipped to the spine is not shameful while you learn. A combination water stone is the one purchase in this entire piece I would argue with you about, because it is the only one that changes what your knives are capable of rather than merely maintaining them.

Verdict three · when to send it out
There are four situations in which I will tell you to hand the knife to somebody with a proper wheel and a trained eye. A visible chip in the edge, which needs coarse grinding to remove and a full re-bevel afterwards. A blade whose bevel has been ground badly out of true, usually by years of a pull-through carbide gadget. Serrated knives, which need each scallop addressed individually with a tapered rod. And a genuinely expensive Japanese knife with a hard, thin, asymmetrically ground edge, where an inexpert first attempt can cost you far more than the sharpening fee.
A professional sharpening usually costs a few pounds or dollars per knife and takes a day or two. Set the newly returned edge with your rod each week and your stone each season and you may never need to send it out again. This is not an admission of incompetence. It is the same judgement that sends a suit to a tailor rather than attacking it with kitchen scissors.
The one thing I will not permit is the pull-through carbide sharpener. It does not grind; it scrapes, tearing a coarse groove at a fixed angle that has no relationship to your knife's actual geometry, and it removes a shocking quantity of steel each time. It will make a blunt knife cut tomatoes this evening. It will also shorten the knife's life by years and leave a ragged edge that dulls again within days.
The decision — what actually happens at the edge
The cutting edge of a knife is the line where two ground planes intersect. In a good kitchen knife that line is a few microns across at most — far too fine to see, which is precisely why a sharp edge appears invisible when you look down at it. Everything about sharpening follows from the fact that this apex is extremely thin and therefore extremely fragile in one specific direction: sideways.
Rolling. Under normal cutting the apex meets bone, board, and lateral force, and being thin metal, it bends rather than breaks. The steel is still present and still fine; it is simply lying over to one side, presenting its flank to the food rather than its edge. This is why a blunt-feeling knife can be restored in fifteen seconds by a rod. Nothing was lost. Something was bent.
Wearing. Bend the same apex back and forth often enough and it fatigues and breaks off in microscopic pieces, taking the fine point with it and leaving a rounded shoulder behind. That rounded shoulder is the bright line you saw under the lamp. There is no bending it back, because there is no longer an it. The only remedy is to remove metal from both faces until they meet at a fresh line — which is a stone, and only a stone.
Why the burr is the signal. As you grind one face, metal is displaced rather than fully removed, and it folds over the apex onto the far side as a fine wire. The burr appearing along the entire length is the only reliable evidence that you have ground all the way to the apex across the whole blade — that you have not simply polished the middle and left the heel and tip untouched. Cooks who sharpen without checking for a burr are usually sharpening one third of their knife and wondering why the other two thirds still drag.
And the thing nobody says out loud: a dull knife is the one that cuts you. It slides off the skin of a tomato instead of biting, and it slides towards your hand. Sharpening is not fussiness. It is the safest thing in the kitchen.
If you want the short answer
- Paper snags, edge invisible. Rolled. Ten passes a side on the rod. You are done in fifteen seconds and you did not need to buy anything.
- Bright line along the edge. Worn. Stone, 1000 grit, until a burr runs the full length, then flip, then refine. Nothing else will do this.
- Visible chip, crooked bevel, serrations, or a knife that cost real money. Send it out. Then maintain it yourself forever afterwards.
- You own a pull-through carbide sharpener. I have said what I have to say about this.
