Long-Fermentation Pizza Dough
A long ferment is not about effort; it is about patience. Giving your flour and water two or three days to talk to each other transforms a simple mixture into a manageable, extensible dough that tastes of grain rather than yeast.
Manage your timeline to ensure the cold-chain is uninterrupted.
The refrigerator is the engine here. Aim for a spot toward the back where the temperature is consistent and cold.

What goes in.
- 500gType 00 or bread flour
- 325gCold water
- 10gFine sea salt
- 1gInstant dry yeast
Mastering the Chill
After the initial mix, the dough must be moved immediately to the cold. This prevents the yeast from over-activating, allowing the protease enzymes to relax the gluten structure slowly.
The method.
Dissolve
Whisk the yeast into the cold water until fully dissolved. Add the flour and salt, mixing by hand until a shaggy mass forms.
Knead
Turn the dough onto a clean surface. Knead for 8 to 10 minutes. The dough is ready when it is smooth and passes the windowpane test—where you can stretch a small piece thin enough to see light through it without tearing.
Bulk Rest
Cover the dough with a damp cloth and let it sit at room temperature for one hour to jumpstart activity.
Divide
Use your bench scraper to divide the mass into four equal pieces. Gently shape each into a tight, smooth ball by pulling the sides under toward the center.
Refrigerate
Place each ball into its own lightly oiled airtight container. Move these to the refrigerator for 48 to 72 hours.
Temper
Remove the dough balls from the refrigerator 2 hours before you intend to bake. They need to come up to room temperature to stretch without snapping back.

Whole Wheat Blend
Replace 50g of the bread flour with stone-ground whole wheat for a nuttier flavor and darker crust.
When it doesn't go to plan.
Always weigh your ingredients in grams; volume measurements like cups are too inaccurate for high-hydration doughs.
If the dough resists stretching, stop and let it rest for another 15 minutes; it is still tightening up from the cold.
A 72-hour ferment is the sweet spot; beyond that, the gluten structure may begin to degrade, making it difficult to handle.

Can I use active dry yeast instead?
Yes, but bloom it in a small portion of the water first. Use 1.5g to account for the coarser granule size.
What if my fridge is too cold?
If your fridge stays near freezing, the dough will take longer to wake up. Add an extra hour to your room-temperature temper time.
