Check your temperature
If you don't have a digital thermometer, use your inner wrist to gauge the water; it should feel comfortably warm, not hot. If you flinch, the water is too hot.

What goes in.
- 2 1/4 tspactive dry yeast
- 1 1/4 cupswarm water (105°F-115°F)
- 1 tspgranulated sugar
- 3 1/2 cupsbread flour
- 1 tspfine sea salt
Verifying yeast vitality
By letting the yeast sit in warm water and sugar for ten minutes, you look for a layer of thick foam. This ensures your yeast is active before you commit the rest of your ingredients.
The method.
Dissolve the yeast
Whisk the yeast and sugar into the warm water. Set it aside in a draft-free spot.
Check for foam
After ten minutes, the surface should have a tan, bubbly head. If the water is clear and still, your yeast is dead; discard and start over.
Incorporate flour
Add flour and salt to the yeast mixture. Mix until a shaggy, uneven dough forms.
Knead
Turn the dough onto a floured surface. Fold it over itself and push with the heel of your hand. Repeat until the dough is smooth and pulls away from your palm, roughly 8 minutes.
The first rise
Place the dough in a greased bowl, cover with a damp towel, and wait until it doubles in size. The indentation of a finger pressed into the side should remain, indicating the gluten is relaxed.

Instant Yeast
Can be added directly to dry flour without proofing, but you lose the visual confirmation of activity.
When it doesn't go to plan.
Salt inhibits yeast, so keep them separate until you begin mixing.
A cold kitchen will slow the rise significantly; place your bowl inside an unheated oven with the light turned on for consistent ambient heat.
Avoid using metal bowls for proofing if the room is cold, as they strip heat from the dough.

How do I know if my yeast is expired?
If it fails to foam during the proofing step, it is no longer viable.
Does the type of water matter?
Use filtered or bottled water if your tap water has a strong chlorine scent, as chlorine can stunt yeast growth.
