Mastering Gluten Development in Baking
Gluten development is the formation of a protein network through the hydration and manipulation of wheat flour. When water meets flour, the proteins gliadin and glutenin bond to form an elastic matrix that traps gases, providing the structural integrity needed for leavened baked goods.

Gently stretch a small piece of dough between your fingers. If it thins out to a translucent membrane without tearing, your gluten network is fully organized.
The method.
Hydrate the flour
Mix the flour and water until no dry pockets remain. Let it rest for 20 minutes to allow the water to penetrate the starch and protein granules fully.
Apply mechanical force
Use the heel of your hand to push the dough away from you, then fold it back over itself. Repeat this motion to align the protein strands into a cohesive sheet.
Monitor resistance
As you knead, the dough will tighten. It will transform from a shaggy, wet mess into a smooth, tacky ball that resists your push.

High-protein bread flour develops a stronger, more elastic network than low-protein cake flour.
Salt tightens the gluten structure; add it later in the mixing process if you want a more extensible, relaxed dough early on.
Over-mixing will eventually tear the gluten strands, causing the dough to lose its elasticity and turn into a sticky, broken mass.

How do I know if I have developed enough gluten?
Perform the windowpane test. If the dough snaps back immediately, keep kneading. If it stretches thin enough to see light through it, stop.
