Creaming vs. Rubbing-In: Understanding Fat Incorporation
The structural integrity of your baking depends entirely on how you treat the fat before the liquid hits the bowl. These two methods dictate whether you end up with a tender, lift-heavy crumb or a crisp, layered snap.

Fat-Flour Interface
Rubbing-in creates small, isolated pockets of fat within the flour, which, when melted in the oven, create steam and separation. Creaming forces air into the fat-sugar matrix, which then expands when hit with heat.
The method.
For Creaming: Soften the fat
Bring butter to roughly 65°F (18°C). It should yield to pressure but not lose its shape.
Beat until pale
Add sugar and beat until the mixture turns from yellow to a pale, off-white cream. The volume should noticeably increase.
For Rubbing-In: Cube the fat
Keep butter straight from the refrigerator. Cut into small, uniform cubes.
Coat and break
Use your fingertips or a pastry cutter to incorporate the butter into the flour until the mixture resembles coarse, uneven breadcrumbs.
Maintain cool
Work quickly so the heat from your hands does not turn the fat into a greasy paste.

The Reverse Cream
Rubbing cold butter into dry ingredients before adding liquids to achieve a sand-like texture for ultra-tender biscuits.
Whipped Creaming
Beating fat and sugar for an extended period to maximize aeration for lighter sponges.

If your creamed mixture starts to look curdled, add a tablespoon of your flour to stabilize the emulsion.
When rubbing-in, avoid pressing the fat completely into the flour; you want visible, pea-sized chunks remaining.
Use a bench scraper to handle doughs made by rubbing-in to prevent the warmth of your palms from melting the butter.

Can I use a food processor for rubbing-in?
Yes, use short, quick pulses. Stop the moment the mixture looks like coarse meal, or you will overwork the fat into an oily paste.
