Classic Shortbread Base
This is the structural foundation for bars, squares, and fruit crumbles. Because it lacks leavening, the texture relies entirely on the quality of your butter and how thoroughly you work the fat into the dry ingredients.
Temperature control is your primary tool.
Work the dough quickly so the butter remains chilled; if your hands run hot, use a pastry cutter or a food processor to avoid melting the fat.

What goes in.
- 1.5 cupsall-purpose flour
- 0.5 cupgranulated sugar
- 0.75 cupunsalted butter, chilled and cubed
- 0.25 tspfine sea salt
Even distribution ensures uniform baking.
Use the bottom of a flat-bottomed measuring cup to compress the dough into the corners of the pan. Uniform density prevents the edges from burning before the center is set.
The method.
Prepare the oven and pan
Preheat your oven to 325°F. Line your pan with parchment paper, leaving an overhang on two sides to act as handles for removal later.
Combine dry ingredients
Whisk the flour, sugar, and salt in a large bowl until fully integrated.
Cut in the butter
Add the cold, cubed butter. Use a pastry cutter or your fingertips to rub the butter into the flour until the mixture resembles coarse, pea-sized crumbs.
Press and dock
Dump the shaggy mixture into the pan. Press it down firmly into an even layer. Take a fork and prick the surface of the dough all over to release steam during baking.
Bake
Bake for 25 to 30 minutes. You are looking for the edges to take on a light, toasted blonde color, while the center remains pale and set to the touch.
Cool
Let the pan sit on a wire rack until completely cool. If you try to cut it while warm, it will crumble.

Brown the butter first and let it solidify in the fridge before cutting into cubes; this adds a toasted, nutty depth.
Lemon Zest
Rub the zest of one lemon into the sugar before adding to the flour to release the essential oils.

If the dough feels sticky or too soft after pressing, pop the entire pan in the freezer for 10 minutes before sliding it into the oven.
Use high-fat European-style butter for a significantly flakier final texture.
Measure flour by spooning it into the measuring cup rather than scooping directly from the bag to avoid packing it down.
