Mastering Sourdough Hydration
The feel of the dough is your most reliable gauge, far more than any calculation. Understanding how water interacts with your specific flour allows you to manipulate the texture of your loaf from dense and chewy to light and vaulted.
Know your flour's limits
Not all flour absorbs water equally. Always start with a lower hydration until you learn how your specific brand of flour behaves during the folding process.

Building strength in high-hydration dough
When working with water levels above 75%, skip kneading. Instead, slap the dough against the counter and fold it over itself to align gluten strands without tearing the delicate structure.
The method.
Calculate the ratio
Divide the weight of your water by the weight of your flour. A 70% hydration is a stable starting point for learning.
Initial mixing
Combine all ingredients until no dry flour remains. Let the dough rest covered for 30 minutes to allow the flour to fully hydrate.
Assess tension
During your stretch and folds, observe how the dough pulls away from the tub. If it puddles into a flat disc after one hour, your hydration is too high for your current handling skills.
Adjustment
If the dough feels like soup, decrease the water by 20 grams in your next bake. If it feels like dry clay, increase by 20 grams.

Low Hydration (60-65%)
Yields a sturdy loaf with a manageable dough. Ideal for beginners or for adding heavy inclusions like nuts and seeds.
High Hydration (80%+)
Produces a thin, crackly crust and an expansive, irregular crumb. Requires aggressive surface tension during shaping.

Always weigh your water in grams; volume measurements like cups are too imprecise for hydration math.
Higher hydration doughs benefit from cold retards in the fridge to firm up the structure before scoring.
If your flour has a protein content below 11%, cap your hydration at 70% to prevent the dough from losing structure.

Does my starter count toward hydration?
Yes. A 100% hydration starter is half water. If you use 100g of starter, count 50g as water and 50g as flour toward your total dough calculation.
Why is my high-hydration dough sticking to everything?
It likely lacks sufficient gluten development. Keep your hands damp, not wet, and increase the number of folds during bulk fermentation.
