Pavlova
The contrast between the sugar-glass shell and the cloud-like center defines this dessert. Patience is your primary ingredient, as the meringue must cool slowly inside the oven to prevent it from cracking under the stress of a sudden temperature shift.
Watch the humidity and the bowl
Ensure your mixing bowl is completely free of grease or the whites will never hold a peak. Avoid making this on a damp or rainy day, as the sugar will absorb moisture from the air and turn the meringue sticky.

- 4 largeegg whites, at room temperature

The method.
Preheat and prepare
Set your oven to 250°F (120°C). Draw an 8-inch circle on a piece of parchment paper, flip it over, and secure it to your baking sheet with a dab of meringue.
Whip the whites
Beat egg whites on medium-low until soft peaks form. Gradually add sugar, one tablespoon at a time, increasing speed to high. Continue until the meringue is glossy and stiff enough to hold its shape.
Stabilize
Gently fold in the vinegar and cornstarch using a spatula. Do not overwork the mixture, or you will deflate the air you worked to build.
Shape
Spoon the meringue onto the parchment circle. Use your spatula to pull the sides upward, creating a slight crater in the center for the cream.
Bake
Place in the oven and immediately turn the heat down to 225°F (110°C). Bake for 75 minutes, then turn the oven off and leave the door slightly ajar until completely cool.
Finish
Whip cream until soft peaks form. Dollop over the cooled meringue and top with fruit immediately before serving.

Can I make this ahead of time?
The meringue shell can be made a day in advance and stored in an airtight container at room temperature. Only add the cream and fruit right before serving, or it will soften.
