Soft Dinner Rolls
There is a specific window where a roll is at its best: pulled apart while the center is still warm and the crust holds only a slight resistance. This recipe builds that texture through a straightforward process that rewards patience over complexity.

Room temperature matters significantly; if your kitchen is cold, the rise will take longer, so look for the dough to double in size rather than sticking strictly to the clock.

What goes in.
- 4 cupsall-purpose flour
- 1/4 cupgranulated sugar
- 2 tspinstant yeast
- 1.5 tspsalt
- 1 cupwhole milk, warmed to 110F
- 1/3 cupunsalted butter, softened
- 1 largeegg, room temperature
Developing the Gluten
After kneading, pull a small piece of dough and stretch it thin; if it forms a translucent film before tearing, the gluten is strong enough to hold the gas for a soft rise.
The method.
Mix the dry
Combine flour, sugar, yeast, and salt in the mixer bowl. Stir briefly to distribute.
Incorporate liquids
Add the warm milk, softened butter, and egg. Use the dough hook on low speed until a shaggy ball forms.
Knead
Increase speed to medium. Knead for 7 minutes until the dough pulls away from the sides of the bowl and is smooth and elastic.
First rise
Transfer to a greased bowl, cover with plastic wrap, and let sit in a warm spot until doubled, about 90 minutes.
Shape
Turn dough onto a floured surface. Divide into 12 equal portions. Fold the edges of each piece into the center to create a taut skin on top, then roll against the counter to seal the base.
Proof
Arrange in the greased pan. Cover and let rise again for 45 minutes until they look puffy and touch each other.
Bake
Bake at 375F for 18-20 minutes. The tops should be a light, pale gold. Brush with melted butter immediately upon removing from the oven.

Brush the tops with butter mixed with minced garlic and finely chopped parsley immediately after baking.
Honey Glazed
Add one tablespoon of honey to the milk mixture for a slightly more golden crust.

Use a metal pan instead of glass to ensure the bottoms brown properly before the tops get too dark.
If the dough feels like it is fighting you while shaping, let it rest for 5 minutes to relax the gluten.

You can prepare the dough through step 5, place the shaped rolls in the pan, cover tightly, and refrigerate overnight. Let them come to room temperature and finish the final rise before baking.
