The Essential Chocolate Chip Cookie

Most recipes fail by using room-temperature butter and baking immediately. By cooling the butter and resting the dough, you control the spread and build a structure that stays soft for days.

Patience is a primary ingredient

The overnight chill in the refrigerator allows the flour to hydrate fully, resulting in a deeper, more rounded flavor profile.

  • Heavy-bottomed saucepan
  • Stand mixer or sturdy spatula
  • Baking sheets
  • Parchment paper
  • Cooling rack
Ingredients

What goes in.

  • 225gunsalted butter
  • 200gbrown sugar, packed
  • 100ggranulated sugar
  • 1 largeegg plus 1 yolk, room temperature
  • 1 tbspvanilla extract
  • 280gall-purpose flour
  • 1 tspbaking soda
  • 0.5 tspsea salt
  • 250gsemisweet chocolate feves or chopped bar
The key technique

Control the Maillard reaction

Cook the butter until the milk solids turn a toasted hazelnut color and smell like shortbread. This adds a nutty complexity that standard softened butter lacks.

Step by step

The method.

  1. Brown the butter

Melt butter in a saucepan over medium heat. Swirl constantly until it foams, then settles with dark specks at the bottom. Pour into a bowl to stop the cooking and cool to room temperature.

  2. Mix the base

Whisk the cooled butter with both sugars until no lumps remain. Add the egg, yolk, and vanilla, beating until the mixture looks pale and glossy.

  3. Combine

Fold in the flour, baking soda, and salt until just a few streaks of flour remain. Add the chocolate pieces and mix until incorporated.

  4. Rest

Cover the bowl and refrigerate for at least two hours, preferably overnight. Cold dough prevents the cookies from spreading into thin, flat puddles.

  5. Bake

Preheat oven to 350°F (175°C). Scoop rounded tablespoons onto parchment-lined sheets. Bake for 10-12 minutes. Remove when edges are firm but centers appear slightly underdone.

Variations

Other turns to take.

Dark & Salty

Add 50g of high-quality cocoa powder to the flour and sprinkle a pinch of flaky sea salt on top immediately after removing from the oven.

Toasted Nut

Fold in 100g of walnuts or pecans that have been toasted in a dry pan for 4 minutes.

Tips & troubleshooting

When it doesn't go to plan.

Tip

Measure flour by weight rather than cups to avoid a dry, cakey texture.

Tip

Use chopped chocolate bars instead of chips for irregular puddles of chocolate rather than uniform spheres.

Tip

Do not skip the egg yolk; it adds the necessary fat for a chewy center.

Questions

The ones that keep coming up.

Why did my cookies spread too much?

The butter was likely too warm when you mixed the dough, or the baking sheet was placed on a hot oven rack.

Can I bake the dough immediately?

You can, but the flavor will be less developed and the cookies will be significantly thinner.
