Material matters more than brand
Aluminum is the industry standard for a reason. It is light enough to react quickly to oven temperatures and sturdy enough to hold its shape over years of use.

Understanding Color and Heat
Light-colored metal reflects heat, resulting in a gentle, even rise. Dark pans absorb radiant energy, which can burn the sides of your cake before the center has finished setting.

Check the finish
