Mastering Steam in Your Oven
The most impressive lift in a loaf of bread happens in the first ten minutes of baking. Without a humid environment, that crust locks up instantly, trapping the crumb inside.
Timing is everything
Steam is only useful during the first phase of baking. Once the bread has risen to its final height, you must remove the steam source to let the crust crisp up.

The Dutch Oven Method
The most effective way to harness steam is to use the dough’s own moisture. By enclosing the loaf in a heavy lidded pot, the water vapor released by the baking bread is trapped around it, creating a self-basting environment.
The method.
Preheat the vessel
Place your dutch oven inside the cold oven and heat both to your target temperature for at least 45 minutes before loading the dough.
Generate the blast
If using a roasting pan method, place the pan on the bottom rack during preheating. Just as you slide your bread in, pour the boiling water into the hot pan and shut the door quickly.
Lock it in
If using a dutch oven, place the lid on immediately. Do not lift it until the bread has been in for at least 20 minutes.
Dry the environment
Remove the lid or the steam pan entirely halfway through the bake to allow the hot, dry air to caramelize the sugars and create a distinct crust.

The Spray Bottle Technique
For crusty rolls, mist the oven walls—not the dough—immediately after closing the door. This creates a quick humidity spike.
When it doesn't go to plan.
Use caution when pouring water into a hot pan; the resulting steam is violent and can cause severe burns.
Do not over-steam, or the crust will become tough and leathery instead of thin and shatter-crisp.
If your oven has a convection fan, turn it off for the first 10 minutes to prevent the steam from being exhausted.

Can I have too much steam?
Yes. Excessively long exposure to steam can prevent the crust from darkening and result in a gummy, wet surface.
Does steam affect the color of the crust?
Yes. Steam helps dissolve sugars on the surface of the dough, which then caramelize into a deep, mahogany color once the heat dries the crust out.
