The 100% Constant

In baking math, flour is always 100%. Every other ingredient is calculated as a percentage of that flour weight, which keeps your formulas scalable regardless of batch size.

Step by step

The method.

  1. Weigh your flour

    Place your bowl on the scale and tare it. Add your flour until you hit your target weight, for instance 500 grams.

  2. Apply your ratio

    To achieve 70% hydration, multiply your flour weight (500g) by 0.70. You need 350 grams of water.

  3. Assess the dough

    Lower hydration (60%) creates a stiff, easy-to-handle dough for sandwich loaves. Higher hydration (80%+) results in a sticky, shaggy mass that requires coil folds to build structure.
