Baking Artisan Seed Crackers
The secret to a crisp cracker is not the flour, but the ratio of seeds to binder. When you spread the dough thin enough that light shines through the gaps, you ensure a snap that shatters rather than bends.
Thinness is your only goal.
If the dough is too thick, the center will remain soft. If it is too thin, it may crumble before it crisps.

What goes in.
- 1 cupraw sunflower seeds
- 1/2 cupraw pepitas
- 1/3 cupflax seeds
- 1/3 cupwhite sesame seeds
- 1/4 cupchia seeds
- 1.5 cupswater
- 1 tspflaky sea salt
Let it rest
You must let the seed mixture stand for at least 20 minutes before baking. The chia and flax seeds absorb the water to create a gelatinous glue that holds the crackers together.
The method.
Combine the dry ingredients
Stir all seeds and salt together in a large bowl. Pour in the water and stir until the mixture looks like a thick, porridge-like paste.
Wait for the bind
Set the bowl aside for 20 minutes. You will know it is ready when the water has vanished and the mixture has become tacky and cohesive.
Spread the dough
Lay a large sheet of parchment on your counter. Scoop the mixture onto it, place a second sheet of parchment on top, and use an offset spatula or rolling pin to flatten it into a sheet roughly 1/8-inch thick.
First bake
Slide the parchment with the dough onto your baking sheet. Bake at 325°F (165°C) for 30 minutes, or until the edges are firm enough to peel the parchment away.
Flip and finish
Peel the top parchment off, flip the sheet over onto the baking pan, and bake for another 20 to 30 minutes until deeply golden and dry to the touch.

Herbed
Add 2 tablespoons of dried rosemary or thyme into the dry mix before adding water.
Spiced
Fold in a teaspoon of smoked paprika or crushed red pepper flakes for a noticeable heat.

If your oven has hotspots, rotate the tray halfway through the final bake to ensure even browning.
Do not use a knife to cut the shapes; let the sheet cool completely, then use your hands to snap it into organic, jagged shards.
Store in an airtight container at room temperature once fully cooled to keep them crisp for up to a week.

Why did my crackers turn out chewy?
They were either not baked long enough or were spread too thick. Return them to a 300°F oven for 10 minutes to finish drying them out.
Can I swap the chia seeds?
Chia seeds act as the primary structural binder. If you omit them, the crackers will likely fall apart into loose seeds.
