  4. First turn. Roll the dough into a 20x10 inch rectangle. Fold it in thirds like a letter: bottom third up, top third down. Turn 90 degrees. Wrap and chill 30 minutes.
  5. Complete remaining turns. Repeat the rolling and folding process five more times, chilling 30 minutes between each turn. Always start with the fold facing you. By the sixth turn, you'll have 729 layers.
  6. Final chill and use. After the last turn, chill the pastry at least 2 hours or overnight. Roll to desired thickness and cut with a sharp knife. Avoid dragging the knife through the layers.
