How to Make Bubble Tea at Home

Bubble tea combines strong black tea, milk, sweetener, and chewy tapioca pearls. Cook the pearls until tender, brew concentrated tea, mix with your choice of milk and sweetener, then serve over ice with the pearls at the bottom. The key is getting the pearls perfectly chewy and the tea strong enough to hold its own against the milk.

  1. Cook the tapioca pearls. Bring 6 cups water to a rolling boil in a medium saucepan. Add 1/2 cup dried tapioca pearls and stir immediately to prevent sticking. Boil for 15 minutes, then cover and let sit off heat for 15 more minutes. They should be tender all the way through with a slight chew.
  2. Prepare simple syrup for the pearls. While pearls cook, combine 1/2 cup brown sugar with 1/2 cup water in a small pot. Simmer until sugar dissolves completely. This will coat the pearls and keep them from sticking together.
  3. Brew strong tea concentrate. Steep 4 black tea bags in 1 cup hot water for 5-7 minutes. Press bags against the side of the cup to extract maximum flavor, then remove. The tea needs to be stronger than you'd normally drink because milk will dilute it.
  4. Drain and coat the pearls. Drain cooked pearls and immediately toss with 2-3 tablespoons of the brown sugar syrup. This prevents clumping and adds sweetness.
  5. Assemble the drink. Spoon pearls into the bottom of a tall glass. Add ice to fill halfway. Pour in 1/2 cup cold milk of choice, then slowly pour the tea concentrate over the back of a spoon to create layers if desired.
  6. Sweeten and serve. Add remaining simple syrup to taste, starting with 1 tablespoon. Insert a wide straw and stir once before drinking. The first sip should have tea, milk, and pearls all together.
