How to Make Lassi at Home
Lassi is a simple yogurt-based drink that takes minutes to make. Blend thick yogurt with water, add sugar or salt depending on your preference, then customize with fruits, spices, or herbs. The key is getting the consistency right — smooth but not too thin.
- Total time: 5 min
- Hands-on: 5 min
- Serves: 1
- Difficulty: Easy
Ingredients
- 1 cup yogurt
- 1/2 cup cold water
- 2-3 tbsp sugar
- 1/2 tsp salt
- 1 pinch roasted cumin powder
Step by step
- Chill your yogurt. Use thick, whole-milk yogurt straight from the refrigerator. Greek yogurt works well too. Cold yogurt makes a better lassi than room temperature.
- Choose your base ratio. Start with 1 cup yogurt to 1/2 cup cold water. This gives you a creamy consistency that coats the glass but pours easily.
- Add your sweetener or salt. For sweet lassi, add 2-3 tablespoons sugar. For salty lassi, add 1/2 teaspoon salt and a pinch of roasted cumin powder. Taste and adjust.
- Blend until smooth. Pour everything into a blender and blend for 30-45 seconds until completely smooth and slightly frothy. No lumps should remain.
- Check consistency and serve. Pour into a glass. If too thick, add a splash more water and blend briefly. If too thin, add more yogurt. Serve immediately over ice.
Tips & troubleshooting
- Use a 2:1 ratio of yogurt to water as your starting point, then adjust to taste
- Blend ice cubes directly into the lassi for extra thickness and chill
- Roast cumin seeds in a dry pan until fragrant, then grind them fresh for salty lassi
- Strain fruit lassis through a fine mesh if you want completely smooth texture
- Make it the night before and refrigerate — flavors meld beautifully overnight
Variations
- Mango Lassi. Add 1/2 cup fresh mango pulp or diced ripe mango. Reduce sugar slightly as mango adds natural sweetness.
- Rose Lassi. Add 1 teaspoon rose water and a few drops of pink food coloring. Garnish with chopped pistachios.
- Mint Lassi. Blend in 2 tablespoons fresh mint leaves with salt instead of sugar. Add a pinch of black pepper.
- Cardamom Lassi. Add 1/4 teaspoon ground cardamom to sweet lassi. This is traditional and aromatic.
Questions
- Can I use low-fat yogurt?
- You can, but full-fat yogurt gives better texture and richness. If using low-fat, add less water to maintain creaminess.
- How long does homemade lassi keep?
- Fresh lassi stays good in the refrigerator for 2-3 days. Stir well before drinking as separation is natural.
- Why is my lassi too thin?
- You added too much water or your yogurt wasn't thick enough. Add more yogurt and blend again, or let it sit in the fridge to thicken slightly.
- Can I make it without a blender?
- Yes. Whisk vigorously by hand or use an immersion blender. For fruit lassis, mash the fruit well first, then whisk everything together until smooth.
