Step by step

- Add ice water while blending. With the processor running, slowly pour in 1/4 cup ice water. The hummus will get lighter and fluffier. Add more ice water if needed until it's completely smooth and creamy.
- Taste and adjust. Stop and taste. Add more lemon juice for brightness, salt for depth, or tahini for richness. Blend again after each addition.
