How to Make a Naked Cake
A naked cake is simply a layer cake with minimal frosting between layers and none on the outside, letting the cake itself show through. You'll bake your layers normally, then apply just enough frosting between each layer to hold them together while leaving the sides completely bare for that rustic, undressed look.
- Difficulty: Medium
Step by step
- Bake your cake layers. Make 2-3 layers using your preferred cake recipe. Let them cool completely on wire racks - warm layers will make your frosting melt and slide.
- Level the layers. Use a serrated knife or cake leveler to trim any domed tops. You want flat, even surfaces that will stack cleanly.
- Prepare your frosting. Make about half the amount you'd normally use for a fully frosted cake. You only need enough for thin layers between each cake layer.
- Place the first layer. Set your bottom layer on your serving plate. If it's sliding around, dab a small amount of frosting under the cake to anchor it.
- Add filling. Spread a thin, even layer of frosting across the top - about 1/4 inch thick. Use an offset spatula and work from the center outward.
- Stack the next layer. Center the second layer on top and press down gently. The frosting should spread slightly but not ooze out the sides.
- Repeat and finish. Continue with remaining layers, adding frosting between each. Leave the top and sides completely unfrosted - that's the naked look.
- Clean and present. Wipe any stray frosting from the plate. Dust the top with powdered sugar or add fresh fruit if desired.
Tips & troubleshooting
- Choose a cake recipe that's sturdy enough to stand without full frosting support - pound cake, vanilla, or chocolate work well
- Make sure your layers are completely level or the naked sides will show any unevenness
- Chill the assembled cake for 30 minutes before serving to help everything set
- Keep the frosting between layers fairly thick - too thin and the layers might slide
Variations
- Semi-Naked Cake. Apply a very thin layer of frosting to the outside and scrape most of it off with a bench scraper, leaving just enough to see the cake texture through it.
- Naked Cake with Drip. Keep sides bare but add a chocolate or caramel drip down from the top edge for contrast.
- Fruit-Filled Naked. Use fresh berries or fruit preserves between layers instead of traditional frosting.
Questions
- Do naked cakes stay fresh as long as frosted ones?
- They dry out faster since there's no protective frosting layer. Cover with a cake dome or plastic wrap and eat within 2-3 days.
- Can I transport a naked cake?
- Yes, but chill it first so the filling firms up. Use a cake carrier and avoid hot cars or warm weather.
- What if my cake layers are different heights?
- Level them with a knife before stacking. Uneven layers will be very obvious on a naked cake since there's no frosting to hide imperfections.
- Should I use buttercream or cream cheese frosting?
- Either works, but buttercream holds up better at room temperature. Cream cheese frosting needs to stay cooler.
